Comforting Carbonara
Check out this comforting spaghetti carbonara, full of cheesy goodness and flavourful pancetta. A perfect dish for a chilly evening.

You Will Need:-
160g whole-wheat spaghetti
3 egg yolks
25g of parmesan cheese
75g of pancetta

Instructions
1. Start by bringing a large saucepan of lightly salted water to boil on the hob.
2. Whilst the water is coming to a boil, slice the pancetta into thin slices or cubes and brown them in a pan for 15 minutes, until golden and crispy.
3. Once the water has boiled, place your spaghetti in and cook until just tender (al dente).
4. In a bowl, lightly whisk the egg yolks together and then combine them with 3 quarters of the Parmesan or Pecorino cheese (make sure you leave some for garnish!)
5. Once cooked, drain the spaghetti but make sure you save a couple of cups of pasta water (this is super important- it brings the creamy sauce together!) and then add your spaghetti to the pan with the pancetta and turn off the heat.
6. Pour your egg mixture into the spaghetti, add a splash of the pasta water and quickly stir everything together until deliciously creamy - the heat from the pasta will cook the egg.
7. Serve up in a deep dish or bowl and add the rest of the Parmesan or Pecorino cheese for garnish.
